110 g SR flour
40 g corn flour
100 ml cold beer (replace with sparkling water if you prefer)
100 ml cold sparkling water
Combine flours well in a bowl, add liquid and stir to combine well.
Dip fillets of floured fish into the batter, letting excess batter drop back into the bowl.
Deep fry until golden and the fish is cooked through. Using smaller even sized pieces makes this easier to judge.
Serve immediately.
