500 g SR flour
500 g butter
170 g custard powder
200 g icing sugar
Soften butter and mix all ingredients together to form a soft dough. I use the Kenwood for this.
Roll into small balls and place on a buttered oven tray.
Cook in a moderate oven for about 10 minutes until lightly coloured.
These biscuits are very moreish left plain, but can be topped with a piece of glace fruit, nut or chocolate before cooking to give added flavour if required. I especially like a lump of crystallised ginger...push well into dough before cooking.
