For my inchie this week I simply used the daffodil logo of The Cancer Council of Australia, as that is where I tend to check on updates and best practice guidelines in regard to skin care. Especially when I was working and writing OHS policies and procedures, they were an invaluable resource across a wide spectrum of health issues, including solar UVR.
The matting layer is plain red...to reflect the consequences of over exposure!
Here in Southern Tasmania, our UV index is usually quite low over the cooler months, rarely above 1. The Cancer Council has a great app. for one's phone, to allow immediate access to UV Index readings when out and about. A good resource for everyone, especially if one has small children.
Yesterday I made lemon curd and small meringues as I had a surfeit of eggs available, and a few lemons in the bowl that needed to be used. We really enjoyed the combined results for pudding last night...I rarely indulge in pudding these days...we just eat it after all and none of us need the kilojoules...so these were a special treat. It was James, our eldest sons' birthday, so we had a little celebration despite the fact that he lives on the mainland and couldn't be present...The curd really is that yellow, both the egg yolks and the lemons were quite vibrant!
The chilly weather has encouraged me haul out the slow cooker again, and soups and stews will be on the menu for the next little while...and speaking of that, I found a recipe recently on the AWW Food site while searching for ways to use an excess of ricotta, for a vegetarian lasagne cooked in the slow cooker...I really did not believe it would work, being an "easy" lasagne sceptic, but I was very pleased with the result, as were the lads, who really enjoyed it. In fact I think Chris actually had three consecutive meals from the leftovers, before it was all eaten up. The best bit, for me, was that it used a packet of dry lasagne sheets from the pantry, which did NOT need to be cooked before using...just broken up to fit the oval shape of my cooker dish! (I really really hate having to reconstitute the dry sheets before assembling a lasagne).
I adapted the recipe a little, as one does, using just what I had available in the pantry, freezer and fridge on the day, but it was so easy and the result delicious enough for the process to go straight into my e file...and not many recipes do that these days. The recipe would lend itself to any combination of fillings, so will probably reoccur on the menu soon in some format or other.
Better trot, I have a pair of slipper socks on the go for Chris...with the cooler weather he is sure to be wanting them finished sooner rather than later...I might just leave the library until the morning...I seem to gain inertia exponentially as the day progresses, these days I find.
